Pandoro Bread Pudding - Video recipe

When it comes to desserts, Verona lays claim to the world-famous Pandoro, a golden-coloured cake traditionally gifted and enjoyed during the Christmas season. In my family, we always end up with so many that we had to find creative ways to use them up after the holidays. I’m sharing one of my favourite family recipes: Pandoro Bread Pudding!


• 1 Pandoro (about 1-1.5 lbs) / (circa 1-1.5 lbs)

• 8 large eggs / uova grandi

• 2 egg yolks / tuorli

• 1 ½ cups 35% whipping cream / panna liquida al 35%

• 1 ½ cups whole milk / latte intero

• 2 tbsp vanilla extract / cucchiai di estratto di vaniglia

• ½ tsp almond extract / cucchiaino di estratto di mandorle

• ½ tsp cinnamon / cucchiaino di cannella

• ¾ cup sugar / zucchero

• ¼ cup powdered sugar / zucchero a velo

In a large bowl, whisk together the eggs, whipping cream, whole milk, vanilla extract, almond extract, cinnamon and sugar.Grease a 9x12 baking dish (at least 2 inches high). Arrange the pandoro cubes in the baking dish, making sure the corners are filled. Pour the mixture over the pandoro. Let stand about 15 minutes until the liquid is mostly absorbed. Gently toss from time to time to make sure the cubes are filled with liquid. Place in the oven uncovered for about 45-50 minutes or until the middle is set and the top is golden. Cool. Sprinkle powdered sugar over top.

In una grande ciotola, mescolare assieme le uova, la panna liquida, l’estratto di vaniglia, l’estratto di mandorle, la cannella e lo zucchero. Ungere una teglia da forno 9x12 (alta almeno 2 inches). Sistemare i cubetti di pandoro nella teglia, assicurandosi di coprire gli angoli. Versare il mix sul pandoro. Lasciar riposare per circa 15 minuti finché gran parte del liquido viene assorbito. Mescolare delicatamente di tanto in tanto per assicurarsi che tutti i cubetti siano inzuppati di liquido. Infornare senza coprirlo per circa 45-50 minuti o fino a quando il centro è stabile e la parte superiore dorata. Lasciar raffreddare. Spolverare con lo zucchero a velo.
