1 kilo of salt cod
3 cloves of garlic
1 tbsp of ground hot pepper
½ cup chopped parsley
½ cup extra virgin olive oil
Slices of crusty bread for serving
Cut cod into manageable sections (3-inch pieces).
Soak in water for 3 days to desalt, making sure to change the water regularly.
Strain and cool.
Preferable cooking method is over charcoal for maximum taste but you can also BBQ the cod or boil it.
Once cooked, flake apart in a large bowl, add ingredients and mix well.
Let stand for half hour before eating.
